Traditional almond pastes are prepared as required by the ancient Sicilian recipe handed down to the pastry chefs who work it with patience. The dough of these sweets hides the secrets of the oldest cooks within itself and is then left to rest for one night. It is said that the Viceroys preferred this biscuit during royal breakfasts and ordered several from their monzù when they had to leave for long journeys. Thanks to the almond’s properites, these cookies have a long shelf life.
